In my particular SIBO situation, this delicious, fragrant, not too spicy or black peppered, layered with flavors sauce is really a gift. (And none of that sneaky unspecified "spices" trick found in the label.) Again, it works well with MY particular circumstances, which are pretty limited, and I am not in the medical field, but if it's something you are able to try I encourage you! It is a real treat. Hubby likes to use the verde sauces as a topping on his meat, but all the ones in the local grocery are full of onions. I ordered a couple of bottles of the new Green Enchilada Sauce so he could give it a try. In a pinch and not wanting to go to the grocery store with a migraine, I threw open the pantry and used the Green Enchilada Sauce, GF spaghetti, left over chicken and some cheddar cheese to make a casserole. The Green Enchilada Sauce is mild but full of flavor. Hubby had three helpings! And from his comments during dinner, it sounds like we've finally found a verde sauce he can safely enjoy.

The taste of this sauce is spot on, you won't miss the onion and garlic at all. However, it is a bit too thin for my liking. It was hard to cook meat in and when I tried to smother my enchiladas in it to bake, the sauce just ran off in to a puddle. I think this is more designed to be a dipping sauce than a cooking sauce. I could see it tasting great with chips, on nachos, or with taquitos but it is not an enchilada sauce in the traditional sense-still tastes great though!
