Ingredients for Fody’s Low-FODMAP BBQ Chicken Salad
- 2 tbsp Fody’s Garlic Infused Olive Oil
- 1 lb. boneless skinless chicken thighs
- ½ tsp kosher salt
- 1/3 cup Fody’s Original BBQ
- 2 heads romaine lettuce, chopped
- 1 cup Fody’s Maple Dijon Dressing, or to taste
- 1 roma tomatoes, diced
- ¾ cup cooked corn
- ¼ cup chopped cilantro
- ⅔ cup shredded cheddar cheese
- 1 cup gluten-free croutons
Directions for Fody’s-Low FODMAP BBQ Chicken Salad
- To start preparing your low-FODMAP BBQ chicken salad, heat a large skillet over medium heat. Add Fody’s garlic-infused extra virgin olive oil. Once the garlic-infused olive oil is hot, add your pieces of boneless chicken thigh, with salt, and mix. Arrange chicken in single layer. Cook 7-10 min, flipping halfway, until chicken is just cooked through. Add BBQ sauce, and stir. Transfer to a plate.
- To make the base for your low-FODMAP BBQ chicken salad, add the romaine to a large mixing bowl and toss with Fody’s bloat-free maple dijon dressing. Top with your cooked chicken thighs, diced tomatoes, corn cilantro, cheese and croutons.
