Fody's Sausage, Kale + Pumpkin Baked Ziti
Get ready to cozy up to the most delicious autumn-inspired meal, featuring Fody Foods Marinara Sauce and Garlic-Infused Oil! This pumpkin, sausage and kale baked ziti is a healthy pumpkin recipe and gluten free pasta dish, and it's a festive take on an Italian classic that is simple to make and so much fun to eat.
Fody's Sausage, Kale + Pumpkin Baked Ziti Ingredients:
- 1lb gluten free penne or ziti pasta, cooked al dente
- 1lb nitrate free pork sausage (no seasonings added, removed from casing)
- 1 cup kale, roughly chopped
- 2 tbsp Fody's Garlic Oil, divided
- ½ cup Fody's Marinara Sauce
- 1 cup pumpkin puree (be sure this is pure pumpkin puree, not pie filling)
- 5 tbsp fresh sage, minced
- 1 tbsp dried oregano
- 1 tsp salt
- 1 tsp pepper
- ½ tsp all spice
- 1 cup shredded mozzarella cheese
- Parmesan cheese for serving
Directions for Fody's Sausage, Kale + Pumpkin Baked Ziti
Pre-heat oven to 350F and grease a 9x13 baking dish.
Bring a pot of water to a boil + cook pasta according to package instructions.
In a large frying pan over medium heat, drizzle Fody Foods garlic oil just enough to coat the bottom of the pan, about 1 tbsp. Add in kale, herbs, spices, salt + pepper and sausage, breaking up sausage while cooking + cooking until sausage is browned and kale is wilted.
Add FodyFoods Marinara sauce, pumpkin puree, and remaining garlic oil. Stir to combine.
Drain pasta and add to the pan, stirring to fully coat pasta. Pour into baking dish + top with shredded mozzarella.
Bake 30-35 minutes until cheese is melted + golden.
Sprinkle with parmesan cheese before serving.
