Fody's Coconut Snowman Low FODMAP Pancakes

Description of Fody's Coconut Snowman Low FODMAP Pancakes

Nothing says cozy winter breakfast like snowman pancakes. You can make these fluffy low FODMAP pancakes standard size, if you like, but why not get the kids involved (or be a kid) and have some fun crafting these low FODMAP desserts. The batter is fairly standard tender pancake batter, and our image is just a suggestion for decoration.

You could make snowmen, snowwomen, give them hats, scarves, or even arms. The only trick with these pancakes is to pay attention to what you are using for decoration if you are following the low FODMAP diet. The reason I say this is because this is the type of recipe that the whole family can enjoy, and chances are there are family members who are not following the diet. In general, use low FODMAP ingredients and toppings, but also remember that the serving sizes are so low that this should be easy to figure out, FODMAP stacking-wise. Did you know that many sugar-based cake and candy decorations from the craft store are low FODMAP? Note that the dried pineapple on our left-hand snowman has not been Monash University-tested for FODMAPs; so he can be served to a non-FODMAPer.


Fody's Coconut Snowman Low FODMAP Pancake Ingredients:

Pancakes:

  • 2 cups (290 g) low FODMAP, gluten-free all-purpose flour that contains xanthan gum
  • ¼ cup (50 g) sugar
  • 1 tablespoon baking powder; use gluten-free, if following a gluten-free diet
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 3/4 cups (420 ml) whole lactose free milk, at room temperature
  • ¼ cup (60 ml) neutral vegetable oil
  • 1 large egg, at room temperature
  • ½ teaspoon vanilla extract

Low FODMAP Decoration Options:

  • Finely shredded unsweetened shredded coconut
  • Sifted confectioners’ sugar
  • Miniature low FODMAP chocolate morsels (I used these for eyes and mouths)
  • Pecan halves (I used these for noses)
  • Low FODMAP candy decorations (I used these for buttons, eyes and mouths)
  • Low FODMAP dried fruit (I used this for a scarf)
  • Broad coconut flakes/chips (I used these for hair)
  • Low FODMAP pretzel sticks (I used these for arms)

Directions for Fody's Coconut Snowman Low FODMAP Pancakes:

Whisk together the gluten-free flour, sugar, baking powder, salt and baking soda in a large mixing bowl; Make a well in the center.

Whisk the wet ingredients together in a separate bowl.

Add the wet to the dry and whisk until almost completely smooth; do not overbeat. It is OK if there are a few lumps (but this is not as vital when using gluten-free flower, as when making pancakes with regular all-purpose flour).

Heat electric griddle, heavy skillet or nonstick pan over low-medium heat. Coat with nonstick spray and heat until a few drops of water dance.

To make snow-people with our approximate dimensions, use a rounded tablespoon to dole out the batter for the bodies, and a rounded teaspoon to dole out the batter for the heads, making sure to give each pancake plenty of room in the pan. Cook until bubbles begin to appear here and there, about 1 minute or so. The bottoms should be light golden brown. Flip over and cook for about 30 seconds more or until that side is light golden brown as well. Remove to a platter in a single layer as they are done. Start decorating by sprinkling pancakes lightly with the fine-shred unsweetened coconut and a light dusting of confectioner’s sugar to make your “snow.”

Then it is time to decorate! Have all the decorations (don't forget to keep track of which ones are low FODMAP) laid out. Folks like to create their snow-folk. Have some fun and serve immediately.

Tip: The snow-people can be made in a variety of sizes, but if you just want to make standard, round pancakes, about 3 ½-inches (9 cm) across, you will get about 32 gluten-free pancakes out of this batter; still consider this recipe to provide 8 servings.
