Fody’s Tofu Taco Bowl
These tofu taco bowls are full of vibrant and delicious flavors! The tofu is seasoned perfectly with Fody’s Taco Sauce, along with lots of yummy additions like vegan feta, pepitas, and avocado. They make for a fun and nutritious meal that’s so satisfying and also simple to make.
Ingredients for Fody’s Tofu Taco Bowl
- 3 tbsp Fody’s Shallot Infused Olive Oil, divided
- 10 oz. extra-firm tofu, drained and squeezed dry with kitchen towel
- ¼ cup Fody’s Taco Sauce, divided
- 1 cup frozen corn
- ¼ tsp kosher salt
- ¼ tsp black pepper
- ½ tsp paprika
- 1 large head romaine lettuce, chopped
- 1 avocado, sliced
- ½ cup vegan feta, crumbled
- 1 cup cherry tomatoes, halved
- 1/3 cup pepitas
- ½ cup Fody’s Mild Salsa
Dressing:
- 2 tbsp Fody’s Ranch Seasoning
- 8 oz. dairy-free Greek-style yogurt
- 4 oz. dairy-free sour cream
- 2 tbsp water
- Juice of 1 lemon
Directions for Fody’s Tofu Taco Bowl
- Mix together all Dressing ingredients in a bowl until smooth. To make the tofu, heat a large pan on medium heat. Add 2 tbsp shallot oil. Crumble tofu into the pan. Cook 5-6 min, toss, and cook 5-6 min stirring occasionally. Add taco sauce, stir, and cook 2-3 min. Transfer tofu to plate.
- Heat remaining shallot oil in the pan and add corn, salt, pepper and paprika. Stir and cook 4-5 min until golden brown in spots.
- To assemble bowls, divide romaine among serving bowls. Top with tofu, corn, avocado, feta, tomatoes, and pepitas. Dollop salsa over top and drizzle with ranch dressing.
