Fody's Chicken Caesar Pasta Salad
Everything you love about chicken caesar turned into a quick, easy and gluten-free/Low FODMAP pasta salad! It’s made with gluten-free pasta, fresh romaine, juicy tomatoes, Fody Caesar Dressing, and all the parmesan cheese! Serve it as a main course or omit the chicken and turn it into hearty Low FODMAP side dish. It's the perfect addition to your next potluck or summer bbq!
Fody's Chicken Caesar Pasta Salad Ingredients:
- 8 oz. gluten-free pasta (such as rotini), dry
- 1 head romaine lettuce (about 4 cups), chopped
- 16 cherry tomatoes, halved
- ½ cup shredded parmesan cheese (about 2 ounces)
- 1 cup gluten-free croutons (optional)
- ½ cup Fody Low FODMAP Caesar Dressing
- 2 large chicken breasts
- 1 Tbsp Fody Low FODMAP Shallot-Infused Olive Oil
- Salt, black pepper & paprika, to taste
Directions for Fody's Chicken Caesar Pasta Salad
Cook the gluten-free pasta according to the package’s directions, then drain it and set aside to cool completely.
Preheat your oven to 400 degrees and spray a baking dish with nonstick cooking spray. Next, place your chicken breasts in the dish and brush both sides with Fody shallot-infused olive oil. Season both sides with salt, pepper, and paprika, and bake for 20 minutes. Once done, let your chicken cool then cut into bite-sized pieces.
Next, add your cooled pasta, romaine lettuce, tomatoes, parmesan cheese, and chopped chicken to a large bowl, and drizzle Fody Low FODMAP Caesar Dressing over the top. Toss the salad until everything is evenly coated. Sprinkle croutons over the top and serve immediately.
