Fody's Steak with Salsa Verde Chimichurri Sauce Ingredients:
- 2 steaks, about 1” thick
- Sea salt + black pepper for seasoning
- 2 tbsp high heat cooking oil
- ¼ cup Fody’s Salsa Verde
- 2 tbsp Fody’s Shallot Oil
- ½ cup fresh chopped cilantro
- ½ cup fresh chopped parsley
- 2 tbsp dried or fresh oregano
- ½ tsp salt
- 1 jalapeno, seeds removed (optional if you like heat)
Directions for Fody's Steak with Salsa Verde Chimichurri Sauce
Season steaks with salt + pepper on both sides and allow to rest at room temperature, about 20 minutes.
Place a cast iron skillet on the stovetop over medium heat and allow skillet to get hot, about 5 minutes.
While pan is heating, in a food processor, add the salsa verde, shallot oil, cilantro, parsley, oregano, salt and jalapeno (if using). Pulse until a smooth paste forms. Alternatively you can use a blender, mortar + pestle, or chop ingredients finely if you do not have a food processor.
Add cooking oil to the hot pan + place steaks in the cast iron pan (if pan is not large enough, cook the steaks one at a time) and sear about 1 minute. Using tongs, flip the steak cooking for another 3-4 minutes. Check the steak for doneness by slicing against the grain or using a meat thermometer. Medium Rare is about 120-125F.
Top with salsa verde chimichurri and serve. You're ready to enjoy a gut-friendly, healthy steak night!
