Description of Fody's Grilled Shrimp Tacos With Salsa Verde

You could grill these shrimp on an outdoor grill, but they also do very well indoors on a grill pan or cast iron pan on top of the stove any time of year. Tacos are an easy weeknight meal and Fody now has several Low FODMAP salsas for you to choose from, including the Salsa Verde highlighted here. Mildly spiced and tangy, it accents the shrimp perfectly.

BTW corn tortillas can vary greatly in texture. Some are more flexible than others. Corn tortillas with and without gums have both been lab tested by Monash University and are suitable for Low FODMAP tacos. I find those with gums are easier to handle and are less prone to cracking and falling apart.

        Directions for Fody's Grilled Shrimp Tacos With Salsa Verde

        Toss the shrimp with the Fody Garlic-Infused Olive Oil and Fody Taco Seasoning and allow to sit. Toss the cabbage and carrot together in a small bowl, stir in lime juice and season with salt.

        Heat your grill (charcoal or propane) outdoors, or grill pan indoors, to a medium heat and cook shrimp just until opaque and cooked through, turning over once, about 1 to 2 minutes each side.

        Char the corn tortillas on both sides over an open flame on a gas stove or your grill, or on clean grill pan. Prepare 2 Low FODMAP tacos per person, filling tacos with shrimp, topping with cabbage/carrot mixture and Fody Salsa Verde. Garnish with cilantro and serve immediately.
