Looking for an easy and flavor-packed low FODMAP lunch or dinner recipe that's ready in under 30 minutes? Try these Low FODMAP Fiesta Turkey & Rice Bowls! Lean ground turkey is cooked with red bell pepper and a low FODMAP serving size of pinto beans for an added boost of fiber. The Tex Mex-inspired turkey mix is flavored with Fody’s low FODMAP taco seasoning and taco sauce and then served in a bowl with lime-flavored rice, lettuce, low lactose cheddar cheese, cherry tomatoes, and Fody’s low FODMAP salsa. Make the bowls your very own by substituting in other low FODMAP toppings like sliced olives, sliced green onion tops, or lactose-free sour cream.
Fiesta Turkey:
Heat garlic-infused olive oil in a large skillet over medium-high heat. Once hot, add turkey, breaking into crumbles, and brown until cooked, about 5-6 minutes. Add red bell pepper and saute for 3-4 minutes to soften slightly. Stir in taco seasoning, taco sauce, and pinto beans. Continue to cook until everything is warm. Set aside.
Cook rice according to package instructions. Stir in lime juice and optional cilantro. Season to taste with salt and pepper.
Assemble bowls by placing 1 cup lettuce, ½ cup lime rice, about ¾ cup cooked turkey, 2 tablespoons shredded cheddar, and 2-3 quartered cherry tomatoes into each bowl. Serve topped with Fody Foods Low FODMAP Salsa and an optional garnish of cilantro!
