Fody’s Maple BBQ Chicken + Roasted Veggie Salad

Fody’s Maple BBQ Chicken + Roasted Veggie Salad Ingredients:
- 2 chicken breasts sliced into strips
- ½ cup Fody’s Maple BBQ Sauce
- 2 cups butter lettuce
- 1 cup kale, roughly chopped
- 1 cup butternut or delicata squash, cubed or sliced into rounds
- ½ cup brussels sprouts, cut in half
- ½ cup red grapes
- ½ cup gorgonzola cheese crumbles
- ¼ cup almond slivers
- ¼ cup Fody’s Maple Dijon Dressing
Directions for Fody’s Maple BBQ Chicken + Roasted Veggie Salad
Preheat oven to 425F and line a baking sheet with parchment or a silicone baking sheet. Add squash and brussels sprouts to the baking sheet and roast for 30 minutes.
While squash roasts, cook chicken strips in a large pan over medium high heat, about 15 minutes or until the centers are no longer pink. Toss cooked chicken strips in Fody’s Maple BBQ sauce to make them BBQ chicken strips.
Add lettuce and kale to salad bowls, then top with roasted veggies, BBQ chicken strips, grapes, gorgonzola and almond slivers. Finish with Fody’s Maple Dijon dressing and enjoy!
