Fody's Baked Chicken Fajita Taquitos
The easiest chicken taquitos! Corn tortillas are stuffed with seasoned shredded chicken, chopped bell pepper and zesty taco sauce then baked to golden perfection! Top them with your favorite LOW FODMAP ingredients for a fun Mexican themed dinner!
Fody's Baked Chicken Fajita Taquitos Ingredients:
- 1 lb. chicken tenders
- 1 Tbsp Fody's Taco Seasoning
- ¼ cup Fody's Taco Sauce
- ½ red bell pepper, chopped
- 8 corn tortillas (made with low FODMAP ingredients)
- ½ cup Fody's Medium Salsa
- ½ cup mashed avocado (2 Tbsp per person)
- 1 cup green leaf lettuce, sliced (for garnish)
- 8 grape tomatoes, chopped (for garnish)
- ¼ cup queso fresco, crumbled (for garnish)
Directions for Fody's Baked Chicken Fajita Taquitos
Preheat your oven to 375 degrees and spray a baking dish with nonstick cooking spray.
Next, season your chicken tenders with Fody Foods taco seasoning and place them in your prepared dish. Arrange your chopped bell pepper around the chicken and bake for 15-17 minutes. Once done, use a fork and knife to shred your chicken and mix your shredded chicken and bell peppers together.
Next, take 2 tortillas at a time and place them on a paper plate. Cover them with a damp paper towel and heat them in the microwave for 30 seconds or until the tortillas are very pliable.
Then spread a small amount of Fody Foods Taco Sauce over one tortilla and place a spoonful of your chicken mixture on one end of the tortilla. Carefully roll the tortilla over the mixture and keep rolling until you come to the other end. (Try not to overstuff your taquitos.) Place your rolled taquito on a rimmed baking sheet lined with parchment paper and repeat the process with your remaining tortillas.
Once your taquitos are rolled, increase the oven temperature to 425 degrees and give the taquitos a quick spray with your nonstick cooking spray. Place them in the oven and bake for 15-20 minutes.
Once done, garnish your taquitos with mashed avocado, lettuce, tomatoes and queso fresco. Serve with Fody Foods Medium Salsa on the side.
