Fody’s Farmers Market Veggie Pizza
Spruce up a classic cheese pizza with tasty veggies like arugula, leek + potato for a bright, filling family meal. Featuring Fody’s Marinara Sauce and Garlic Infused Olive Oil this is sure to be your new favorite veggie pizza topping combo!
Fody’s Farmers Market Veggie Pizza Ingredients:
- ¼ cup Fody’s Marinara Sauce
- 1 small Yukon gold potato
- 1 small Japanese sweet potato (purple sweet potato) or 2 small red potatoes
- 1 medium leek, green parts only sliced into ribbons
- 5 oz arugula
- 2 tbsp fresh chives, chopped
- 1 tbsp fresh parsley, chopped
- 2 tbsp Fody’s Garlic Infused Olive Oil
- 1 tbsp lemon juice
- 1 tsp black pepper
- 1 tsp dijon mustard
- ¼ cup parmesan cheese
- ½ cup shredded mozzarella cheese, divided
- 1 12” gluten free pizza crust
Directions for Fody’s Farmers Market Veggie Pizza
Preheat oven to 425F
Using a vegetable peeler, thinly slice leeks vertically into ribbons.
Using a mandolin or sharp knife, thinly slice potatoes into rounds.
Drizzle Fody’s Marinara sauce on top of the pizza crust + spread evenly using the back of a spoon.
Sprinkle ¼ cup mozzarella cheese over top of the marinara sauce, then layer potatoes in circles starting from the outside working in, letting the potatoes overlap slightly.
Next sprinkle leeks over top of the potatoes, then sprinkle on the remaining mozzarella cheese.
Bake for 15-18 minutes until crust is golden brown.
While veggie pizza bakes, in a small mixing bowl, whisk together Fody’s Garlic Infused Olive Oil, lemon juice, black pepper, dijon mustard and parmesan cheese to make a dressing. Add arugula, chives and parsley to a large mixing bowl + toss with dressing mixture.
Once veggie pizza is baked, topped with salad + dressing mixture and enjoy.
