Fody’s Low-FODMAP Chicken Quesadillas with Maple BBQ Sauce
These Low-FODMAP Chicken Quesadillas with Maple BBQ sauce aren’t just quick and easy. They’re also bursting with delicious BBQ flavor thanks to Fody’s gut-friendly BBQ sauce, which mixes the sweetness of maple syrup with the tangy smokiness of BBQ–without any of the irritants.
The whole dish also gives you a healthy dose of healthy fats with creamy avocado, and essential nutrients with a heaping helping of fresh veggies. This gut-friendly dinner recipe is the perfect way to add some flavour to your next get-together without any bloating or discomfort.
Ingredients for Fody’s Low-FODMAP Chicken Quesadillas with Maple BBQ Sauce
- 2 tbsp Fody’s Garlic-Infused Olive Oil
- 2 cups pulled rotisserie chicken
- 2 tsp Fody’s Everyday Seasoning
- Dash kosher salt
- ¾ cup of Fody’s Maple BBQ Sauce
- ½ green bell pepper, finely chopped
- ½ cup cooked corn
- ½ cup diced roma tomato
- 1 ½ cups shredded cheddar cheese
- 4 gluten-free tortillas
- ½ avocado, mashed or sliced
- 2 tbsp cilantro, finely chopped
Directions for Fody’s Low-FODMAP Chicken Quesadillas with Maple BBQ Sauce

To start your low-FODMAP chicken quesadillas, heat a large pan on medium heat and add Fody’s garlic-infused extra-virgin olive oil. Once the oil is hot, add the chicken, Fody’s Everyday Seasoning, a dash of salt, and most of the Maple BBQ sauce (reserve some for serving). Stir the mixture until it’s thoroughly heated, then transfer it to a plate. Rinse and dry the pan.
- Next, heat the pan over medium heat, and spray with low-FODMAP cooking spray. Place a tortilla in the pan and top one half of it with chicken, chopped bell pepper, corn, tomato, and shredded cheese. Fold the other half over top. Cook on medium-low heat, for three minutes per side or until you reach your desired crispness. Repeat this for all the tortillas.
- Serve your low-FODMAP chicken quesadillas with Maple BBQ sauce topped with avocado and cilantro.
